Part of my goal in my Tending a Handmade Life journey is to share all sorts of things that are part of everyday slow living ... part of that is sharing recipes here and there.  Okay, so here goes ... a super quick and super yummy Banana Pancake recipe ... all organic ingredients, please! 

  • 1 ripe banana, mashed
  • 2 local eggs
  • 1 tsp (or more!) Ceylon cinnamon- true cinnamon that has more of the good properties
  • 1 Tb coconut flour
  • 1 Tb flax seed meal

Now scramble everything together.  Heat your skillet or griddle.  After heated, add a wee bit of coconut oil for each round of cakes.  Pour batter into skillet and cook until browned.  Because there's not really any flour in these, they don't bubble like regular pancakes.  When nicely browned on one side, flip for a brief sizzle on the other side.

This makes four 4" to 5" cakes.  Not being married to any particular diet, I add a bit of butter and a nice dose of dark brown maple syrup.
